Taller Andaluz de Cocina (TAC) has four fully equipped kitchens spread across three different venues, all located in Seville’s historic Triana neighbourhood and within easy walking distance of one another. Each of these unique spaces has been designed to combine gastronomy, learning, and enjoyment, creating an unforgettable culinary experience.
Triana is one of Seville’s most iconic and vibrant neighbourhoods, renowned for its rich history, distinctive character, and deep cultural traditions. Situated on the west bank of the Guadalquivir River, it is widely regarded as the birthplace of flamenco, where visitors can still experience authentic performances in traditional taverns and peñas. Our location is equally remarkable for its historical significance. Taller Andaluz de Cocina is based inside the Triana Market, located in Plaza del Altozano beside the iconic Triana Bridge. Beneath the market lie the archaeological remains of the Castle of San Jorge, once the headquarters of the Spanish Inquisition. Originally built during the Almohad period, the fortress became the official seat of the Inquisition in 1481. After centuries of decline and repeated flooding from the Guadalquivir River, the castle was abandoned, and in 1823 the city’s food market was established on the site. During the market’s renovation for the 1992 Universal Exposition, archaeologists uncovered the remains of the castle as well as an Almohad-era cemetery, preserving an important part of Seville’s history.
Today, the Triana Market is one of the city’s most beloved gastronomic landmarks. Its lively atmosphere and exceptional selection of fresh, local, and seasonal produce make it a favourite destination for both locals and visitors. Here you’ll find everything from fresh fish and seafood brought in daily from the Andalusian coast to fruit, vegetables, meats, cheeses, extra virgin olive oils, and other regional specialties.
